TIL a $200 'professional' mandoline is worse than my $40 one if you don't check the blade angle first.
I needed to do a huge batch of potatoes for a catering gig and the fancy one I bought just mashed them, so I had to stop and redo everything with my old cheap one, which wasted about 45 minutes and a whole case of spuds.

Classic case of paying for the brand name over actual function. Bet that fancy one looked real nice in the box before it turned your potatoes into paste. Nothing like a time crunch to show you which tools are actually worth their salt. My cheap mandoline has more battle scars than a kitchen knife, but it never lets me down.

Totally agree about the time crunch test. Had a fancy mandoline that shredded everything until the safety guard broke. Now I just use a cheap one with a cut proof glove. That combo works better than any expensive model I've owned. The glove keeps you safe and lets you use the whole blade without fear. Sometimes the simplest setup is the one you'll actually use.
