Friday night we did 210 covers with two guys out sick and I still don't know how we pulled it off
Our grill cook called out at 4pm and the other prep guy went home early, so me and the sous just ran the whole line ourselves for six hours straight and somehow only two tickets got sent back all night, but now I'm wondering if I should be worried that we actually handled it better shorthanded than we do with a full crew.
