Can we talk about using a thermometer vs timing everything by feel?
I compared my usual method of guessing when a steak is done by touch against actually using a probe therm for a week straight at the line. The difference in consistency was huge, I had way fewer returns and the temp was spot on every time. Has anyone else switched over and noticed a big jump in their numbers?

Man I feel like thermometers are a total game changer honestly and I don't know why it took me so long to give them a real shot. Like touch just has so many variables, different muscles have different feels and your hands can get numb from holding hot pans all night. I noticed way less guessing and way more consistent temps once I made the switch.

That's a great point and it actually fits something I've noticed in my own life. So many things we learn by "feel" or tradition end up being way less consistent than we think once you actually measure them. It's like when people say you can tell if dough is kneaded enough by the sound it makes when you slap it, but a cheap kitchen scale gives you a perfect result every single time without any guesswork. Thermometers are just another example of that same principle, replacing vague intuition with something you can actually rely on.
