Call me crazy but I ditched my mandoline for a good old chef's knife

Been slicing veggies for 15 years and finally got tired of cleaning that mandoline every time. Busted out my 8 inch Wusthof and just practiced my technique for 2 weeks straight. I can now slice a case of potatoes in under 20 minutes with no guard and zero cuts. Mandolines are faster for sure but the cleanup time kills any time you save. Plus I had to replace the blade on that thing every 6 months at $30 a pop. Anyone else go back to knife work and never looked back?

Nah just keep your knife sharp and the glide takes care of the rest.

Ngl, saying you slice a case of potatoes in 20 mins without cutting yourself is kinda a flex but I am not buying that speed claim.
