Spent $4.12 on a bag of dried chickpeas and ate like a king for 5 days straight
Last week my grocery budget got cut to $30 for the whole week after an unexpected car repair, so I grabbed a $4.12 bag of dried chickpeas at the Aldi on Route 9 and figured I'd just suffer through it. I ended up making roasted chickpeas, a big pot of curry with a can of coconut milk, and smashed chickpea sandwiches with some Dollar Tree bread, and it was honestly better than the takeout I usually blow $14 on. What's your go to dried bean or lentil meal when money gets tight, and do you soak overnight or just boil them longer?
