Watched a new guy break down a whole ribeye in 25 minutes last Tuesday, when it took me 2 years to get that fast
He came from a shop in Amarillo that only does whole animal, so he's been seam cutting since day one while I spent my first year just trimming briskets, and I'm wondering if anyone else has seen that kind of gap between guys who learned on primals versus guys like me who picked it up piece by piece?
That "seam cutting since day one" thing is the whole answer right there. Guys who start on whole animals learn how muscles actually fit together because they have to, so breaking a ribeye into cuts is just following the lines they already know. You learned the same thing backwards, one piece at a time, which works but takes way longer to click.
