Watched a guy break down a whole pig at the Ohio State Fair and it fixed my cutting
I was at the Ohio State Fair in Columbus about 3 weeks ago and stopped at a butcher demo just to kill time. The guy was breaking down a half hog and he never once sawed through a bone, he just found the seams with his fingers and let the blade slide. I had been forcing my way through shoulders at my shop for 15 years, fighting the bone every single time. That night I tried his method on a pork butt and shaved a good 4 minutes off the job with way cleaner cuts. Anybody else here cut by feel instead of by force, or am I late to this?
