Just broke down my 1000th whole hog this morning
It was a Berkshire from a farm upstate, and hitting that number made me think about how much faster and cleaner my cuts are now compared to my first one. Anyone else have a personal count they keep track of?

I used to think speed didn't matter... but a clean thousand hogs later, I get it.

Yeah that "clean thousand" mark is where it clicks for sure, @john650. I hit that same wall and suddenly speed was EVERYTHING.

My buddy had that same "speed is everything" moment last year. He was doing a catering gig and got through three hogs before the guests even showed up, said it felt like a different job after that thousand mark.
