Showerthought: a diner cook in Tulsa showed me how to fix a burnt roux with a plain potato
Was at a little diner in Tulsa last month and watched the cook burn a roux for gumbo. He just tossed in a peeled potato and let it sit for about 10 minutes. Said the potato soaks up that burnt taste. I tried it at home after I scorched a batch of gravy, and it actually worked pretty good. The gravy still had a little smoke flavor but it was edible instead of trash. I keep a potato next to the stove now just in case. Anyone else heard of this trick or use something else to save a burnt sauce?
Have you ever burned something so bad that your smoke alarm starts cheering you on? That was me last Thanksgiving with a gravy that turned into what looked like driveway tar. I wish I had known about the potato trick back then instead of opening every window in the house and blaming the dog. My grandma always said a raw potato fixes salty soup, so it makes sense it would soak up burnt taste too. I'm gonna keep one on the counter now, mostly so I stop ruining Sunday dinner.
