My grandmother used to tell me about the potato soup her mother made during the Depression. She'd save the water from boiling the potatoes to use as a base for bread the next day. I remember her showing me how to mash the skins right into the soup for extra body and nutrients. People think they're being clever with expensive kitchen gadgets now, but my grandmother could stretch a meal with just a paring knife and a cast iron pot. That kind of resourcefulness is a lost art, and I'm grateful I got to see it firsthand.
