The morning I had to pick between scrubbing the walk-in or prepping 50 pounds of onions

Walk-in was filthy from a leaky container last night, but the onion order came in early and my sous was breathing down my neck about prep. I chose the onions and now the health inspector is coming tomorrow - anyone else get stuck between two bad choices and pick the wrong one?

Did you at least cry over the onions? That might have prepped you emotionally for the health inspector.

But honestly, I think there's a line between prepping for inspection stress and just having a total meltdown over burnt onions during a dinner rush. Emotionally prepped for the health inspector" - lol that line got me. But I gotta push back hard here, because picking the onions was actually NOT the wrong move. Scrubbing a walk-in is busy work you can do anytime, even after hours, but prepping 50 pounds of onions is time-sensitive perishable work that goes bad fast. The health inspector thing is overblown anyway man - they look at walk-in temps and cross-contamination, not a little leaky mess from last night. You can clean that walk-in first thing tomorrow morning before they show up, no problem. The real bad choice would've been letting 50 pounds of onions sit there while you mopped a floor. I'm saying you chose right, and your sous was right to breathe down your neck about it.
