Hot take: I picked a brisket over a pork butt for a small backyard cookout last weekend
I was cooking for just six people and had to choose one main to focus on. The pork butt was cheaper and easier, but I really wanted to nail a brisket flat on my offset smoker. I kept it simple with just salt and pepper, and smoked it for about 8 hours until it hit 203 degrees. It came out way better than I thought, really tender and juicy. Has anyone else had good luck with a smaller brisket for a small group?

Remembered my neighbor trying to smoke a whole packer brisket for his kid's birthday, must have been twenty people. He was up all night, the thing was still tough at noon, total panic. Ended up ordering pizzas. Makes your flat for six sound like a genius move, honestly.

What kind of wood did you use in your offset? I find a strong wood like hickory can be too much for just a flat, but something lighter might not give enough bark.
