That moment I realized I was overmixing my muffin batter for years
I always wondered why my blueberry muffins came out tough and dense instead of fluffy, and last Tuesday I finally figured it out after watching a baking stream. The person said 'mix until just combined' and I was like wait, I've been beating the crap out of mine for like 2 minutes straight lol. Has anyone else had that brain blast where you find out you've been doing a basic thing wrong forever?

Ngl the muffin thing is real but my dumb moment was with pancakes. For like a decade I kept making pancakes that came out flat and sad and I thought it was just my pans or the mix I was buying. Turns out you're supposed to let the batter sit for like 5 minutes before you cook them so the gluten chills out or whatever. I saw some random tik tok where the person literally poured the batter and walked away from the bowl and I was like what the heck is this sorcery. Tried it the next morning and my pancakes puffed up like they were supposed to. Felt like a total clown for all those years of dense breakfast disappointment.

Oh man the pancake thing hits close to home. I used to make pancakes that were like rubber discs until I realized I was overworking the batter too. The real game changer for me was using buttermilk instead of regular milk and folding it in super gently with a spatula, not whisking. I also stopped flipping them after bubbles form on the surface and let them cook a little longer on the first side. Now they come out golden and fluffy instead of chewy. Did you ever try adding a splash of vanilla extract to your pancake batter? That was another small tweak that made a big difference for me.
