Question about getting a mirror finish on a chocolate glaze

It took me four separate batches and almost three hours to stop it from seizing up, just because my kitchen was a little too warm. Anyone have a trick for this besides cranking the AC?

Freezing stuff just makes it sweat and get watery later. Honestly, a warm kitchen is the real test of a glaze, you just have to power through it.

My last mirror glaze attempt looked more like a foggy bathroom window. I ended up using so many ice packs around my mixing bowl it looked like a weird medical procedure. The real trick for me was using a metal bowl set in a bigger bowl of ice water, not just chilling the tools.
