Serious question, why do so many guys ignore torque specs on critical fasteners?

Overheard a lead mechanic saying 'close enough' on a main rotor bolt last week. Has anyone else seen this kind of shortcut and walked away from a job?

That "close enough" comment on a main rotor bolt is terrifying. You don't get to guess on rotor bolts, that's a job where being off by a few foot-pounds can mean the whole thing comes apart in flight. I've seen guys argue that "a little extra" is safer because it's tighter, but that's not how it works. Over-torquing can stretch the bolt or damage the threads, making it weaker than under-torquing. Any mechanic who says "close enough" on something like that shouldn't be touching aircraft. Walking away from that job was the right call, no doubt about it.
