My pour over got better after I stopped using the fancy kettle

Bought a $80 gooseneck last spring and my coffee stayed bitter no matter what. Switched back to my old $15 regular kettle last month and just poured slower, way more control and the flavor opened up. Anyone else find the expensive gear actually makes it worse?

way more control" is exactly it, I had the same thing happen with my setup. I spent forever thinking I was doing something wrong with that fancy kettle and it turned out the spout just didn't work for my pour style. My old regular kettle lets me feel the water flow better and I can slow way down without fighting the thing. It's wild how much the gear can mess with your head, like you're convinced it should be better so you overthink every pour. Honestly, going back to basics felt like a relief, not a downgrade. Glad I'm not the only one who had that weird backward switch lol

Took me six months to realize my fancy gooseneck was the problem, not my technique, and I switched back to a stovetop kettle with a wider spout. Now I just watch the stream and adjust without thinking, way less stress in the morning.
