Burnt some chili flakes in oil once by mistake. It made the whole kitchen smell like a campfire, but honestly, it gave my pasta sauce this weirdly good kick. My roommate thought I was trying to smoke us out, but it became our go-to method for a quick smoky flavor. Still use it when I'm feeling lazy.

My mom's old cast iron pan is where I first accidentally charred some rosemary. @jenny_murphy, your chili flake story totally makes sense because I did something similar with dried thyme last month. Honestly, it smoked up the whole apartment and my cat ran out of the kitchen. But then I tossed it with roasted potatoes and it was amazing. Now I purposely let herbs get a little dark in oil for that rustic taste. Tbh, most of my best cooking tricks come from happy accidents like that.
