Honestly, @mila_harris, I get the nostalgia for your dad's method, but I heard trying to eyeball match those new finishes almost never works. A guy at the auto parts store told me even the factory codes can be off because paint fades differently on each car. Tbh it seems like the complicated paints are the reason we need the codes now, not the other way around.

My mom's old cast iron pan is where I first accidentally charred some rosemary. @jenny_murphy, your chili flake story totally makes sense because I did something similar with dried thyme last month. Honestly, it smoked up the whole apartment and my cat ran out of the kitchen. But then I tossed it with roasted potatoes and it was amazing. Now I purposely let herbs get a little dark in oil for that rustic taste. Tbh, most of my best cooking tricks come from happy accidents like that.
