TIL my first kraut batch showed me real food patience

I remember when I first tried making sauerkraut, rushing it and getting moldy jars. Now, I let it sit for weeks without checking every day. That slow process taught me to chill out about quick fixes for my stomach issues. My digestion is smoother now, and I miss that old, impatient version of me lol. Funny how a crock of cabbage can shift your whole vibe.

Man, your kraut story reminds me of my first try at pickling green tomatoes (which I only did because my plants froze early). I got so nervous about botulism that I checked the jars twice a day, which just broke the seal every time. Finally left them alone in the back of the pantry for a full month, and they turned out perfect, sour and crispy. That whole thing taught me that my worrying just messes with the process (and honestly, probably with my own head too). It's like you said, these food projects sneakily train your brain to back off.

Hey, ever tried the "set and forget" method with other ferments? I label jars with the date and a "do not open before" reminder so I physically can't mess with them early.

It's wild how many basic skills now double as patience training. My sourdough starter forces me to plan days ahead instead of wanting bread right now. Even growing tomatoes from seed teaches you that some cycles just can't be rushed. These little kitchen and garden jobs quietly rewire your brain to accept natural timing over instant results. You start applying that wait to bigger stuff without even noticing.
