Finally hit 100 gallons of hot sauce this year. Shocked myself.

Ive been fermenting peppers for about 3 years now but never tracked totals. Just counted up my jars this weekend and it was 100 gallons exactly. Kinda wild how much a simple setup with some 5 gallon buckets can produce when you just keep going.

I mean 100 gallons is insane, that's like a whole bathtub of hot sauce. Makes you realize how fast it adds up when you just keep the ferments rolling.

Pretty sure a bathtub is way more than 100 gallons though, @joel_butler. Like standard tubs are around 40-60 gallons tops. Still, yeah, 100 gallons of anything fermenting is a lot of space and pepper prep. I can barely keep up with my 5 gallon bucket without it going weird on me. Must be a whole different level of commitment when you're dealing with that much volume. Makes you wonder how many habaneros that actually is in total.

Right there with you, @joel_butler. I had to shut down a ferment once because it got away from me and I just didn't have the stomach to fix it, and that was only 10 gallons.
