PSA: I've been over-mixing my meatloaf for 10 years and it was always dry
I saw a video last week where the cook only mixed until the ingredients just came together and my latest loaf came out so tender I couldn't believe it. Has anyone else had a "wait that's not how you do it" moment with a basic dish?

Is it just me, or does every basic cooking trick feel like a life hack once you figure it out? I had the same thing happen with scrambled eggs - always cooked them on high heat until they got brown and rubbery. Turns out low and slow with constant stirring makes them creamy and soft, and now I actually look forward to making breakfast.

actually my buddy dan had the exact same meatloaf revelation last month and he was so mad about all the dry years. he told me he used to mix it until it looked like a smooth paste and now he just folds it a few times and stops. his wife finally admitted she'd been secretly adding extra ketchup to hide the dryness for like five years.
