Last week my neighbor peeked into my pan while I was caramelizing onions and said 'you're scared of the heat, huh,' which stung because I've been babying every burner for a decade. I started cranking the flame way higher and letting things actually brown, even burning a batch of chili on purpose just to taste the difference. Has anyone else had a random kitchen critique that rewired how you cook, or am I the only one who needed a lecture from someone who eats cereal for dinner?
