The barista at the place on 5th in Portland said my beans were sitting too long, and she was right
I had been buying the big 2 pound bag to save money, around $22, and grinding it all week without thinking much about it. A barista at a small place on 5th in Portland asked what roast date was on my bag and I honestly had to go check, it was 5 weeks old. She said past about 2 weeks the flavors go flat, and I always thought that was just coffee snob talk. Started getting the 12 ounce bags instead and doing smaller batches, and the difference in the cup was real, more sweetness, less of that papery taste. Anyone else switch to smaller bags and actually notice it, or is this just in my head?
