I finally got my morning cup right after a coworker in Denver told me to stop boiling the water
Dana from the desk next to mine kept saying to let the kettle sit for about 30 seconds after it clicks off before pouring, and I always rolled my eyes at it. Tried it last Tuesday with my usual dark roast and the cup came out way smoother, no burnt taste at all. So is 30 seconds the magic number or does it depend on the roast?
Skip the wait and just pour right off the boil, honestly. Water temp drops fast once it hits the mug and the grounds anyway, so your 30 seconds probably just made the coffee weaker, not smoother. A darker roast actually likes hotter water since the beans are less dense and the heat pulls out the oils. Try pouring straight away with the same dark roast and see if the "burnt" taste was really just your old ratio being off.
