I used to hate pour-over coffee. Until a barista in Denver showed me why.

I was at this tiny shop in Denver called Huckleberry Roasters. Just wanted a quick drip coffee. The barista there, she insisted I try their pour-over. I told her I don't get the hype. Takes too long. Tastes weak. She just smiled and made me one anyway. Then she walked me through every step. The bloom. The pour speed. The exact water temp. I took a sip and it was like a totally different drink. Dark chocolate notes and a clean finish. Now I own a gooseneck kettle and spend 5 minutes every morning on it. Has anyone else had a barista completely change their mind on a brewing method?

Oh, I read that Huckleberry Roasters is basically a Denver institution, so that tracks!

lol "institution" is kinda wild to me. I mean yeah they've been around for a minute but it's not like they're some 100 year old coffee dynasty or anything. It's a good roaster for sure but I feel like Denver coffee people just throw that word around for any place that's been open longer than 5 years. Huckleberry is solid but idk if I'd put them on a pedestal like that. Plenty of smaller spots around town that are just as good if not better.
