I finally tried cold brew vs. iced pour over back to back
Did a little side by side test in my kitchen last saturday. Made a batch of cold brew with my usual Colombian beans and let it sit for 16 hours. Then did a pour over straight onto ice with the same beans. The cold brew was way smoother and had zero bitterness but it lost some of the fruity notes I like. Iced pour over kept more complexity but had a tiny bit of acidity on the finish. For me the cold brew was easier to drink black without adding anything. Anyone else find cold brew a little too one note or is it just my recipe?

Guess you can have smooth or interesting but not both.

Oh come on, that's just how it goes with anything worth having. You get one or the other but never both at the same time. Smooth is boring and predictable, interesting keeps you on your toes but drives you crazy. It's like choosing between a reliable sedan or a beat up convertible with no ac. Both get you where you're going, but one is way more of a hassle and the other puts you to sleep. I'd take interesting any day just for the stories, even if it means dealing with a few headaches along the way.
