Had a talk with my barista buddy that made me question everything about pour-over ratios

So my friend Jake who works at that third wave shop downtown basically told me I've been overcomplicating my morning pour-over for like 2 years. He said 'just use 15 grams of coffee and 250 grams of water, stop timing and swirling so much.' I was always doing that 1:16 ratio with a 45 second bloom and felt like a pro. But then I tried his simple method and honestly the cup tasted cleaner and less bitter. Has anyone else had a coffee person tell you to dumb things down and it actually worked?

Funny how people act like timing every step is some sacred ritual. I've hit the buzzer and forgot to start the timer plenty of times, @lucasjackson, and the cup still tasted fine. Overthinking small stuff like that is just gonna stress you out for no reason.
