Why does no one talk about how long it takes to dial in a new flat top?

I got a new 36 inch flat top griddle for the food truck three weeks ago. Thought I could season it and start cooking the same day. Spent about 4 hours just getting the oil layers right and still had sticky spots on the second shift. Then another 2 days of tweaking the temp zones because the left side runs way hotter than the right. Has anyone else wasted a full week just getting one of these things to cook even?

And those hot spots are brutal... had to basically memorize where on mine the eggs cook perfect vs where they burn in 30 seconds. Took me a good week and a half before I stopped checking every pancake with a thermometer.

Nope, nobody talks about it. Takes forever to get those hot spots figured out.
