That $40 batch of shallots I forgot in the walk-in
I prepped a full cambro of minced shallots for a special sauce last Tuesday, then got slammed with a 60-cover party and totally spaced on using them. Six days later they were a slimy, stinky science experiment that took me 20 minutes to scrub out of the plastic. How do you guys keep track of your backup prep when the weeds get tall?

Lost half a case of leeks the same way once and now I label EVERYTHING with a date.

That's the thing about cooking and just life in general, isn't it? We all learn these lessons the hard way. I spent years throwing out half-used bags of flour and sugar because I couldn't remember if they were a month old or a year old. Now I keep a permanent marker right in the kitchen drawer next to the measuring spoons. It's funny how a little bit of extra effort in the moment can save so much time and money down the road.
