Showerthought: the banquet server who told me my sauce was 'too loud' at a wedding in Boise
Two Saturdays back I was running the line for a 180 guest wedding at a venue off Chinden Blvd, and a server named Marcus pulled me aside during the salad course. He said, 'Chef, folks keep asking if there's hot sauce in the chicken, and they're not smiling when they ask.' I had bumped the cayenne in my cream pan sauce because the tasting went flat, and I never once thought about who was actually eating it. Now I'm second guessing how I run my tasting panels, does anybody else get feedback from the floor crew or just the couple?
