Rant: I dropped $210 on a used Alto-Shaam holding cabinet and it paid for itself in 2 months
Bought it off a guy in Cleveland closing his deli, and now I hold 40 lbs of short rib through service without a single temp drop. Anyone else running used hot boxes, or am I the only one gambling on Craigslist equipment?
Used gear is the move when restaurants panic sell. My whole line runs on auction finds that outlived the shiny new stuff. New prices are for suckers with investors.
Feels like that whole "buy once cry once" rule gets flipped on its head when restaurants dump good gear for pennies just to clear out fast. Half the stuff in my kitchen came from closings or auctions and it all outlasted the brand new junk I overpaid for.
