A dishwasher at my spot in Denver told me 'you cook with your ears, chef' when I was rushing a pan sauce.

He was right, I wasn't listening for the right sizzle before I added the wine. Anyone else have a simple piece of kitchen advice that just clicked for them later?

Listen for the sauce to quiet down before you add liquid, like that dishwasher said. Watching works too, like drew_bennett24 mentioned, but sound tells you about the heat under the pan. It's a simple trick that stops you from steaming your food.
