DAE almost wreck their guts eating 5 day old rice? My $3 meal plan went sideways real bad.
So I do the big Sunday cook thing to keep meals under five bucks. This time I made a huge pot of rice and beans on a Sunday, portioned it into seven containers, felt like a genius. By Thursday I was starving after a double shift and ate two of the oldest ones cold, right out of the fridge. Fast forward four hours and I was hugging the toilet in my apartment on 9th Street, sweating and shaking. My roommate, who is a nurse, asked me if I had left the rice out too long before I put it away. Turns out the stuff I cooked and let sit on the counter while it cooled for like two hours was the problem. I had no idea rice could go bad that fast, I always thought it was fine if it did not smell weird. Now I am scared to do meal prep with rice at all, which stinks because it is the cheapest base there is. Anyone got a system for cooling and storing big batches that actually keeps it safe past day three?
