I swore by hand planing for finish work until a buddy's botched attempt...
He was trying to impress a client and gouged the oak pretty badly... Watching him recover with a random orbital sander changed my entire view on when to use modern tools.

Always set your planer to remove just a whisper of material on each pass. It's tempting to take off more to save time, but that's how you end up with kindling instead of lumber. Measure the board frequently with calipers to ensure you're staying on track. I learned that lesson the hard way on a maple slab years ago. Take it slow, and you'll preserve both your project and your patience.
