Two job offers, one wanted me to start Monday, the other made me wait 6 weeks

Got offered a role in Austin last Thursday that wanted me in by Monday, then a smaller firm in Portland said they needed six weeks for a background check. The fast one felt like a red flag and the slow one felt like they had zero urgency, which one actually signals a healthy workplace? Has anyone else picked the slow path and regretted it or vice versa?

Took the slow one once, six weeks of waiting just to realize I was the backup hire and they'd rather have had someone else. My gut's clearly broken, I picked based on how much time they gave me to overthink it.
