Customer asked me to leave the fat cap on a brisket, then complained it was too fatty
Had a guy at the counter last Saturday pick out a 12 lb brisket and ask me to keep the whole fat cap on because his uncle swore by it. Two days later he comes back in waving his receipt, saying it was a greasy mess and I should've trimmed it. I pulled up the order slip with his own note on it and he just kind of laughed it off. Now I ask every brisket customer twice and write it down in front of them. Any of you got a way to handle the ones who change their mind after the fact?
Carry the double check even further and make the slip a mini sign off. Write the fat cap choice, the weight, and the date, then have the customer put their initials right next to it before it hits the smoker. It takes ten seconds and stops the whole "you should've trimmed it" thing cold, since nobody can argue with their own handwriting. A phone pic of the slip stapled to the ticket helps too if they get loud about it later.
