Unpopular opinion: salvageable burnt food vs. total loss - where's the line?

Last Tuesday I tried making a grilled cheese in Columbus and walked away for 'just a minute' - came back to a blackened mess. I scraped off the burnt parts and ate it anyway, but my roommate said that's gross and I should toss anything with char. Do you guys try to save partially ruined meals or is it all trashed once it's overdone? I'm genuinely curious where everyone draws the line.

Heard this chef on a podcast say burnt food is basically just carbon. Not good for you. I draw the line at anything that's actually black though. Like if it's just dark brown you can scrape it off and it's fine. But when it's that deep black color? That stuff is carcinogenic. I had a pizza once where the bottom was completely charcoal. Tried to eat the top part. Tasted like ash even after picking off the burnt bits. Not worth it.

Man, @jesse_green55 is right about that ash taste carrying through everything. My buddy saved a burnt casserole once by scraping off the top layer and mixing the rest with extra cheese, still tasted like a campfire. He ended up tossing it after two bites, said his whole mouth felt smoky.
