I used to hover over the pan like a hawk, now I walk away and actually cook
Ruined a $22 ribeye last month in my Chicago apartment by flipping it every 40 seconds until it was gray inside and out. These days I set a timer, pour a glass of wine, and leave the kitchen. The crust is better and I stopped burning things. Anyone else find that ignoring the food worked better than babysitting it?
