I scorched a batch of chicken thighs in my cast iron last month and spent 40 minutes scrubbing with steel wool before my wife dumped baking soda and water in it and walked away. Twenty minutes later the crust lifted off with a spatula like it was nothing, and I just stood there feeling like a chump.
