Hostel kitchen timing debate, check-in vs meal prep hours

I spent 2 full evenings in Lisbon waiting to use the stove because the hostel only had it open 6-8pm, but breakfast was served 7-9am so nobody cleaned it. Maybe it's just me, but should hostels prioritize cooking hours over breakfast prep, or are we supposed to plan around their schedule? Has anyone else hit this wall?
