Honestly, I used to avoid farmers markets thinking they were too pricey for my budget. Tbh, hitting them right before packing up scored me cheap veggies that are perfect for soups. Have you noticed more late-day deals like this where you live?

Turns out the secret to gourmet cooking is just buying vegetables that are one step away from compost. Following @chen.adam's advice means my freezer is now packed with questionable "soup starters". My family is starting to fear my new hobby.

Lol that's actually genius. Do you have a favorite market for this or is it just hitting up any grocery store right before closing? I'm wondering if the fancy organic places have better compost-bound veggies or if it's all the same.

What time do you usually show up? I aim for the last 30 minutes, and I just ask vendors straight up what they can do for a deal on whatever's left. Sometimes they'll just hand over a whole box of slightly soft tomatoes or peppers for a couple bucks (perfect for roasting or sauce). It's become my go-to move for cheap soup bases and stir-fries, and honestly, it totally works.
