Derailleur tuning by ear from my early shop days
Spinning the crank and listening for rub was my method. These days, a jig does it in seconds, but I value that skill.

My first bike shop in Chicago had a rule about no music during derailleur adjustments. Hearing someone suggest doing it on a climb makes me laugh. That seems like a great way to introduce your derailleur to a nearby tree. You would need the balance of a circus performer and the patience of a saint. It is a clever way to make a simple task needlessly hard.
