Finally caved and tried batch prepping my lunches on Sundays after swearing it was pointless for years

I used to think spending Sunday afternoon cooking was a huge waste of my weekend, especially after I tried it once in 2019 and ended up throwing out most of it by Thursday. But last month I saw a guy on Reddit mention using a simple marinade formula for chicken thighs and roasting them all at once, then just swapping the sides daily. I gave it another shot with 6 thighs and some pre-chopped veggies, and it actually took under an hour total. Now I'm saving about 45 minutes each morning and not hitting fast food at lunch anymore. Anyone else find a specific prep method that finally clicked after multiple failed tries?

Roasting a whole bunch of chicken thighs at once is basically the only way meal prep works long term. In my experience, anything with ground beef or fish never reheats right and ends up a sad mess by Tuesday. Thighs stay moist, and you can just toss them on top of some greens or rice and call it done. Pre-chopped veggies are a solid hack too. Frozen broccoli florets are even lazier and don't go bad in the fridge. Just saying, maybe don't overcomplicate it with fancy sauces or grains that turn to mush. Your mileage may vary, but it's not like you're trying to cure cancer here. It's lunch.
