That cooler trick is wild. He left it wrapped up for like 12 hours after it was done? I would be so sure it was going to be dry and terrible.

Remember my uncle's fourth of july cookout... he put the brisket on at like 4am, fell asleep, and it sat in a cooler wrapped in towels until dinner. It was still crazy good, honestly. iris_fisher54 would probably hate that, talking about texture and all... but sometimes you just get lucky, or the meat forgives you. Makes you wonder how much of the all-night thing is really needed, or if it's just for the story.
