My butcher said something that wrecked my brisket routine

He asked if I ever check the packer weight against the grade stamp, not just the price tag. I pulled a 16-pounder last week that was stamped Select, not Choice like I paid for. How many of you actually verify that stamp before you buy?

That's a solid twenty bucks per pound you overpaid for disappointment. I'd be checking every stamp from now on, maybe with a magnifying glass. Your butcher just saved your next cookout.

You ever notice how some butchers will have that "prime" stamp looking a little too perfect? I read a piece where they found some places use a custom stamp to just mark up choice cuts. Saw a picture where the border lines were way too thick compared to the real USDA stamp. Makes you wonder how often that happens.

That "border lines were way too thick" thing is a reach. Most butchers aren't running a stamp scam. The real issue is just mislabeling in the case, calling something prime when it's choice. A custom stamp is way more effort than it's worth for a small shop. I'd worry more about the actual marbling in the meat, not the ink.
