TIL parchment paper beats greasing the pan when you are making brownies
I baked brownies for a church potluck in Dayton last Saturday and for the first time the whole slab came out in one piece. I quit brushing butter and dusting flour about 6 months ago after a friend named Dana showed me how to lay a parchment sling across the pan with the ends hanging over. The edges used to fuse to the metal and I would lose half the corners digging them out with a spatula. Anyone got a trick for getting the parchment to stop curling up while you pour the batter in?
