Hot take: I skipped the blind bake on my pecan slab for Thanksgiving and it came out soggy in the middle
I had to pick between blind baking the crust for 20 extra minutes in my sister's tiny oven or just dumping the filling in and hoping, and now I'm staring at a sad wet middle wondering if you all would have rolled the dice too or played it safe?
