Hit 500 sourdough loaves baked since 2019, still hate the scoring process
People always talk about the moment baking clicks for you. For me that was 500 loaves last Tuesday. Sounds like a lot but I still can't get a clean ear. I follow the same hydration, proof times, fridge schedule. Every loaf tastes fine. But the scoring never looks like those photos online. I've tried different blades, angles, wet vs dry. Doesn't matter. I think the whole aesthetic thing is overrated anyway. My neighbor asked me why I don't just buy bread after I told him the count. Has anyone else hit a big number but still feel like a beginner at one specific part?
