Can we talk about baking bread in a wood fired oven vs a home oven, is the crust really worth the hassle?
I spent last Saturday at a friend's place in the Catskills where his homemade brick oven turned out a loaf with a crackly crust that beat anything I've made in my electric model, but it took 4 hours of babysitting the fire, so is that texture difference actually worth the time for a weekday baker or are we just chasing an ideal that doesn't fit real life?
