Just counted how many loaves of sourdough I've baked since I started.
I keep a little notebook by my oven, and when I flipped through it this morning, I saw I hit 500 exactly. It felt like a real shift from just following recipes to actually understanding the dough. How do you guys track your progress, or do you just go by feel?

You're right, carter.laura, it's basically a cookbook of your own fails and wins.

Yeah, that notebook turns into your own personal reference book after a while. You start seeing patterns in your own notes that a regular recipe would never show. It's how you build your own instincts instead of just following someone else's.
